Beacon Hill to Showcase Culinary Expertise at Grand Rapids International Wine, Beer and Food Festival
The Grand Rapids International Wine, Beer and Food Festival is quickly approaching and will feature the world’s finest beverages paired with creations from West Michigan’s most exceptional dining establishments, including Beacon Hill at Eastgate – the event’s one and only participating retirement community.
Beacon Hill at Eastgate will be showcasing a carefully curated menu made using fresh ingredients from its own backyard and local purveyors during the event Nov. 22 and 23 at the Devos Place, Booth 147. As the only retirement community at the festival, Beacon Hill is proud to go head-to-head with the area’s finest eateries to demonstrate how it removes culinary boundaries in senior living.
“At Beacon Hill, serving inventive dishes with homegrown ingredients is part of our daily routine, so being in a room with the best of the best feels like a natural fit for us,” Executive Chef Luke Theaker said. “Beacon Hill isn’t just a premiere retirement community – it’s an excellent dining destination that’s praised by residents and visitors alike. We are incredibly proud to attend the festival as the only retirement community and look forward to wowing attendees with the Beacon Hill culinary experience.”
The dishes Beacon Hill will be serving at this year’s Wine, Beer and Food Festival include:
- 4-H Posole: Beacon Hill 4-H-raised pigs slow-cooked in green salsa verde stew with traditional accompaniments.
- Fall Garden Spaetzle: Crispy pan-fried spaetzle with garden fall vegetables.
- Beef Crostini: Roasted, shaved and chilled prime rib marinated in garden herb pesto and served on toasted Field & Fire bread with tomato-chili jam.
- Mexican Hot Chocolate Whoopie Pie: Chili chocolate cake sandwich with cinnamon milk chocolate buttercream.
4-H Feature Spotlight: Charlotte Daggett, daughter of Clinical Care Director, Amanda Daggett
The 4-H Posole featured at this year’s Wine, Beer, and Food Show was made possible by Charlotte Daggett, daughter of Amanda Daggett, our Clinical Care Director. Every year, Charlotte and her brother Gavin actively participate in 4-H, where they lovingly raise pigs that Beacon Hill purchases to serve at our events. In fact, Charlotte’s pigs have been a highlight at our Annual Summer Celebration.

Charlotte shares that she “loves raising a pig every year” and eagerly looks forward to picking out names and planning for the next one. Her older brother, Gavin, serves as her mentor, guiding her through the process of caring for and training the pigs for showmanship.
Beacon Hill has a strong commitment to local ingredients, relying on its half-acre community garden to supply produce for its imaginative and appetizing meals. When the Beacon Hill chefs can’t produce ingredients themselves, they source from local purveyors.
Beacon Hill at Eastgate is a distinctive, nonprofit, life plan community nestled in the established and vibrant Eastgate neighborhood. The retirement community is home to a food truck and four on-site restaurants, which include the Club Room, Main Dining, Garden Café and Bistro – all featuring world-class cuisine that ranges from global fusion and plant-based delights to bold flavors and gourmet comfort. Beacon Hill’s Garden Café and Bistro are open to the public year-round.
