Sauces to Brighten Up A Meal

Beacon Hill's Culinary TeamAs we’re all spending lots more time in our homes than normal, what better time to share a few recipes from Executive Chef Caitlin Becker? These are a few recipes for sauces that can bring new life to meat dishes and add delicious flavor to your meal. Chef Becker explains: “I chose these sauces because they are simple to make and can be a good way to dress up many types of proteins. They are very versatile and can work with just about any protein. These sauces are simple to garnish but can add a show-stopping ‘wow factor’ to the dish.” So, if you’re looking for something new to make, try out one of these!

Blackberry Merlot Sauce

½ Cup Merlot or Cabernet Wine

2 tbsp. Blackberry Jam

1 tbsp. Butter

Salt & Pepper to taste

 

Start by reducing the red wine in a small pot or pan. Reduce halfway or until it starts to get thick.

Stir in the blackberry jam until dissolved.

Add in cold butter and salt and pepper to finish.

Garnish with fresh blackberries and blue cheese if desired.

 


 

Rosemary Cream Sauce

½ Cup Heavy Cream

3 tbsp. Chopped Fresh Rosemary

1 tbsp. Sour Cream

Salt & Pepper to taste

 

Start by reducing heavy cream by half with the fresh rosemary. Do this low and slow so the rosemary imparts great flavor.

Once reduced, add in the sour cream and salt and pepper to finish.

Garnish with a sprig of rosemary and fresh lemon wedge if desired.

 


 

Chimichurri Sauce

1/4 cup coarsely chopped fresh Parsley

2 tablespoons coarsely chopped fresh Cilantro

3 tablespoons Red Wine Vinegar

4 large Garlic Cloves, chopped (2 1/2 tablespoons)

2 teaspoons crushed Red Pepper

Salt & Pepper to taste

1/2 cup Extra-Virgin Olive Oil

 

In a food processor, combine the parsley, vinegar, garlic, cilantro and crushed red pepper. Process until smooth, or to desired consistency. Season with salt and pepper.

Transfer the sauce to a bowl and pour the olive oil over the mixture.

Let stand for at least 20 minutes.

Mix and Serve. Garnish with a fresh lime wedge if desired.
